I had never made granola until I found this recipe. It is super easy, yummy and good for you too!

Ingredients
- 3 cups old-fashioned oats
- 3/4 cup chopped nuts (almonds, pecans, walnuts etc.)
- 3/4 cup apple juice concentrate
- 1/4 cup brown sugar
- 2 Tbsp canola oil
- 2 tsp cinnamon (or other spice)
- 1/2 cup dried fruit (raisins, craisins, dates, cherries etc.)
Preheat oven to 350.
Spray a 9×13 rimmed cookie sheet with non-stick spray. (I rub olive oil on mine). Spread oats and bake 15 minutes.
Add chopped nuts and bake 10 minutes.
Meanwhile, combine juice concentrate, brown sugar, oil and cinnamon.
Pour over oats and nuts and mix gently. Add fruit and stir again.
Decrease oven to 325 and bake an additional 20 to 30 minutes, stirring halfway through, until golden brown.
Cool in pan 25 minutes. Store in an airtight container up to one month.
I really like this granola. I eat it as a cereal and a snack. I think it would also be good mixed in yogurt. I don’t like nuts so I substitute sunflower seeds. I also plan on trying pumpkin seeds when I can find them in the store.
Ashley suggests mixing and matching the nuts and fruits to your taste. Her favorites are walnut craisin and almond date.
