I found the most delicious shrimp dip recipe for New Year’s Eve this year. Then tragedy struck. The recipe slid down between my kitchen cabinets and wall. So close, but yet, so far. What’s a girl to do? Attempt to recreate based entirely on memory. Lucky for me (and for you) I was able to come up with a recipe that comes very close to the original.
You will need
- 1 lb. cooked shrimp
- 1 cup mayo
- 8 oz. cream cheese, softened
- zest of 1 lemon
- 1/4 to 1/2 tsp. cajun or creole seasoning
- 1/3 cup chopped celery
- 1/3 cup chopped chives
- 2 tsp. lemon juice
Combine mayo and cream cheese in large bowl. Add lemon zest, seasoning, celery, chives and lemon juice. Mix well. Chop shrimp and add to mixture.
Refrigerate until ready to serve. I think it taste better if you leave it in the fridge for at least a few hours before serving. It gives the flavors a chance to blend together and taste even yummier.
Serve with crackers and enjoy.
