Make Your Own Granola Bars

My kids love the store bought granola bars.  For a long time I was OK with it.  But, I really wanted to find a better solution to their granola bar habit.  I made my own granola and it was so much better than any granola I had ever bought which made me want to find a granola bar recipe even more!

Luckily, my sister found one.  These granola bars are super easy to make, healthy and delicious!  The best part is you can sub many of the ingredients to fit your taste.

I don’t have a lot of knowledge in the food allergy area, but I’m pretty sure these would qualify as gluten free, peanut free and soy free.

Ingredients

  • 2 cups oats
  • 1 cup nuts (I use 1/2 to 2/3 cup sunflower seeds and pumpkin seeds instead)
  • 1/4 cup flaxseed
  • 3 Tbsp butter
  • 2/3 cup honey
  • 1/4 cup brown sugar
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 2/3 cup dried fruit
  • 1/4 cup chocolate chips (optional)

Directions

  • Preheat oven to 350.
  • Mix oats, nuts, flaxseed in an 8 x 11 baking dish.  Bake 10 to 15 minutes or until golden.  Stir halfway through baking time.
  • Reduce heat to 300.
  • Place butter, honey, sugar, vanilla and salt in a sauce pan.  Cook over medium heat.  Bring to a boil and stir for one minute.  Remove from heat.
  • Take oat mixture out of the oven and dump into a bowl.
  • Pour honey and butter mixture over oat mixture and combine.
  • Add fruit and chocolate chips.  (The chocolate chips will melt if you add them at this stage.  I usually wait until the granola bars are finished baking, sprinkle the chocolate chips on top and then push them down into the granola bars while it’s still hot).
  • Line the 8 x 11 pan with parchment paper.  Be careful!  The pan will still be hot from being in the oven.  (If you don’t have parchment paper, grease the pan really well).
  • Pour the oat mixture into the pan.  Press down with wet hands or press down with a spatula.
  • Bake 25 to 30 minutes or until golden brown.  Cool and cut.

You will have a hard time eating just one!
